No-Bake Peanut Butter Energy Balls

No Bake Peanut Butter BallsI have always been a fan of protein balls. They are easy to make, portable and just the right size for when you’re on the go. Not to mention they require absolutely no cooking or baking.

Of course being a Registered Holistic Nutritionist protein balls have to be full of real whole food ingredients. I’m talking wheat-free or gluten free oats that provide fuel and important dietary fiber, protein that helps rebuild muscle and healthy fats (yes, fats are good for you) that help to fill the hunger gap mid-morning or mid-afternoon. OR a quick pick me up after a sweaty workout. The ingredients are minimal and simple and of course you can add your own add-ins to cater to your own taste.

½ cup natural creamy peanut butter (or almond butter)
1/3 cup raw honey
1tsp vanilla extract
1 cup gluten free or wheat free oats
2/3 cup unsweetened shredded coconut
½ cup flaxseed meal
6 tbsp raw cacao nibs


  • In a mixing bowl stir together peanut butter, honey and vanilla extract.
  • Add the remaining ingredients and stir until well combined.
  • Roll into balls passing back and fourth between your hands.
  • Store in airtight container in the fridge.

They will keep up to a week. You can also keep them at room temperature but I love them cold.

These awesome balls of energy are raw, vegetarian and wheat-free. You can even swap out the raw honey for agave nectar to make them vegan friendly.
