Dairy-free, Gluten-free and Refined-sugar free Granola Bars

Dairy Free Gluten Free Granola BarIt can be tiring and difficult to find a granola bar that isn’t full of useless additives that we just don’t need. I know everyone loves a little sugar (or a lot), but our bodies are just not designed to handle massive amounts of it. When I came across this recipe I was so excited because the ingredients called for whole-food substitutes. Dates and honey contain natural sugars and are great energy boosters. Wouldn’t you rather eat foods that have an expiry date on them than foods that somehow last forever?

As a side note: feel free to add in other ingredients such as raw pumpkin seeds, raw sunflower seeds, chia seeds, unsweetened shredded coconut, whatever you may be craving.

1 cup packed dates, pitted (make sure they are sticky and moist)

¼ cup raw honey

¼ cup natural peanut butter (can also use almond butter)

1 cup raw almonds

1 ½ cups gluten free oats (can also use wheat-free oats)

Process the dates in a food processor until a “dough” like consistency forms. AKA you can roll the dates into a small ball.

Place oats, almonds and dates in a bowl- set aside.

Warm honey and peanut butter in a small pot over low heat for a few minutes. Stir and pour over oat mixture and then mix altogether. Once thoroughly mixed, transfer to an 8X8 dish lined with parchment paper so they lift our easily.

Press down until flattened. Cover with plastic wrap and set in freezer for 15-20 minutes to harden.

Remove from dish and chop into however many bars you would like. Store in an airtight container for up to a few days. Can also keep in freezer.
